first glass was bland and unassuming, after the wine had a chance to breath it developed an odd bitter taste

Although I rated this wine as "terrible," I should also point out that it is a cheep bottle of wine. In fact, Charles Shaw is commonly referred to as Two Buck Chuck. That being said, there isn't much flavor to this Sauvignon Blanc. It is too acidic and bitter, in my opinion, in comparison to its flavor. Although 2004 is a young wine, I don't believe that aging will improve it much. I did however, find that chilling the wine significantly increased the sweetness, which countered its natural bitterness. So, if you need a cheap bottle of white wine, Two Buck Chuck is your man. Just make sure you serve it cold.

Fairly bland at first with a bitter after taste. For the price it's hard to beat for an everyday wine. As mentioned before, chilling the wine for quite some time does help with the taste.
